Salmon, King Prawn, and Asparagus Lasagna
17/11/2023Here I present a recipe for preparing delicious salmon, king prawn, and asparagus lasagna with an Italian touch.
Ingredients
- 9-12 sheets of fresh lasagna pasta (depending on the size of the baking dish)
- 300g smoked salmon slices
- 300g cleaned king prawns
- 300g asparagus
- 250g bechamel sauce
- 200g cream cheese (such as Philadelphia)
- 100g grated Parmesan cheese
- Extra virgin olive oil
- Salt and pepper to taste
Preparation

Clean the asparagus and remove the woodiest parts. Cut them into pieces and steam or boil in salted water for a few minutes until they are tender but still crisp. Set aside.

In a pan, heat a drizzle of olive oil and briefly sauté the cleaned king prawns until they turn pink. Do not overcook to avoid them becoming tough. Set these aside as well.

Prepare a bechamel sauce that is not too thick by adding a pinch of salt, pepper, and, if you like, a bit of nutmeg.

Start layering the lasagna by mixing the cream cheese with some of the bechamel sauce in a bowl to make the mixture softer and easier to spread.

Take a lasagna baking dish and grease the bottom with some bechamel sauce or olive oil. Lay down the first layer of lasagna pasta.

On the pasta, spread a layer of the cheese and bechamel mixture, then distribute slices of smoked salmon, some asparagus, and king prawns.

Continue with another layer of pasta sheets, then again cheese, salmon, asparagus, and king prawns. Keep layering until you run out of ingredients, finishing with a layer of lasagna and a sprinkle of grated Parmesan cheese.

Bake in a preheated oven at 180°C (356°F) for about 20-25 minutes or until the surface is golden brown and crisp.

Let the lasagna rest for a few minutes before serving.
