Paccheri with Salmon

Paccheri with salmon is a delicious and relatively simple dish to prepare. Here is the recipe.

Ingredients

  • 350 g of paccheri
  • 200 g of smoked salmon
  • 200 ml of cooking cream
  • 1 shallot
  • Vodka to taste
  • Extra virgin olive oil to taste
  • Salt to taste
  • Pepper to taste
  • Fresh dill (optional)

Preparation

  1. Start by finely chopping the shallot and sauté it in a pan with a drizzle of extra virgin olive oil.
  2. Cut the smoked salmon into strips or cubes and add it to the sautéed shallot.
  3. Deglaze with a bit of vodka and let the alcohol evaporate.
  4. Add the cooking cream, adjust with salt and pepper, and let cook on low heat for a few minutes until the sauce starts to thicken.
  5. Meanwhile, bring a large pot of salted water to a boil and cook the paccheri following the timing indicated on the package to obtain pasta that is al dente.
  6. Drain the paccheri and transfer them to the pan with the salmon and cream sauce. Toss for a minute or two to let the flavors meld together.
  7. If you like, add some chopped fresh dill for an extra touch of flavor.
  8. Serve the paccheri with salmon hot.

You can garnish the dish with some chive strands or a few pieces of smoked salmon on top for a more elegant effect. Also, you can add a touch of freshness with some lemon juice at the end of cooking if you like the citrus note. Enjoy your meal!
