Salmon Muffins

Ingredients

  • 200 g of flour
  • 2 eggs
  • 100 g of smoked salmon
  • 100 ml of milk
  • 80 ml of extra virgin olive oil
  • 1 packet of baking powder for savory preparations
  • Salt to taste
  • Pepper to taste
  • Fresh dill (optional, for garnish)

Preparation

  1. Preheat the oven to 180 °C.
  2. In a large bowl, mix the flour with the baking powder, a pinch of salt and pepper.
  3. In another bowl, beat the eggs with the milk and olive oil until you get a smooth mixture.
  4. Add the egg, milk, and oil mixture to the dry ingredients and mix everything with a spatula or wooden spoon until there are no lumps.
  5. Cut the smoked salmon into small pieces and gently fold into the batter.
  6. Distribute the mixture into muffin cups, filling them about 3/4 full.
  7. Place the muffins in the preheated oven and bake for about 20-25 minutes or until they are golden and well-risen.
  8. Let the muffins cool for a few minutes before unmolding them.

Once ready, you can serve your salmon muffins with a bit of fresh dill on top to add a touch of freshness and flavor. They are perfect as an appetizer or as part of a brunch.
