Salmon Muffins

Ingredients
- 200 g of flour
- 2 eggs
- 100 g of smoked salmon
- 100 ml of milk
- 80 ml of extra virgin olive oil
- 1 packet of baking powder for savory preparations
- Salt to taste
- Pepper to taste
- Fresh dill (optional, for garnish)
Preparation
- Preheat the oven to 180 °C.
- In a large bowl, mix the flour with the baking powder, a pinch of salt and pepper.
- In another bowl, beat the eggs with the milk and olive oil until you get a smooth mixture.
- Add the egg, milk, and oil mixture to the dry ingredients and mix everything with a spatula or wooden spoon until there are no lumps.
- Cut the smoked salmon into small pieces and gently fold into the batter.
- Distribute the mixture into muffin cups, filling them about 3/4 full.
- Place the muffins in the preheated oven and bake for about 20-25 minutes or until they are golden and well-risen.
- Let the muffins cool for a few minutes before unmolding them.
Once ready, you can serve your salmon muffins with a bit of fresh dill on top to add a touch of freshness and flavor. They are perfect as an appetizer or as part of a brunch.
