Salmon Meatballs

Ingredients
- 400 g of fresh salmon
- 1 clove of garlic
- Fresh parsley to taste
- 1 egg
- 50 g of breadcrumbs
- 30 g of grated Parmesan cheese

- Grated zest of 1 lemon
- Extra virgin olive oil for frying
Preparation
- Start by removing the skin and any bones from the salmon, then cut it into small pieces.
- Finely chop the garlic clove and fresh parsley.
- In a bowl, place the pieces of salmon and add the garlic, parsley, grated lemon zest, Parmesan cheese, breadcrumbs, egg, salt, and pepper.
- Mix all the ingredients well until you have a homogeneous mixture. If necessary, add more breadcrumbs to reach the desired consistency.
- Shape into meatballs with your hands and place them on a plate.
- Heat plenty of extra virgin olive oil in a pan and, once hot, fry the meatballs until golden brown on all sides.
- Drain them on paper towels to remove the excess oil.
