Salmon in Green Sauce

Ingredients
- 4 slices of salmon (about 150-200 g each)
- 2 tablespoons of extra virgin olive oil
- Salt and pepper to taste
- For the green sauce:
- 1 bunch of parsley
- A tuft of basil
- A tuft of mint (optional)
- 1 clove of garlic
- Salted capers to taste
- 6 anchovy fillets in oil
- 1 tablespoon of Dijon mustard
- The juice of 1 lemon
- 100 ml of extra virgin olive oil
- Salt and pepper to taste
Preparation
- Start with the green sauce. Wash and dry the parsley, basil, and mint. Finely chop the herbs with a knife or in the mixer along with the garlic clove, the previously desalted and well-drained capers, and the anchovy fillets.
- Transfer the mix into a bowl and add the mustard, lemon juice, and extra virgin olive oil. Mix well until you obtain a homogeneous sauce. Adjust with salt and pepper and set aside.
- Heat the extra virgin olive oil in a large pan over medium-high heat. Season the salmon slices with salt and pepper, and cook them in the pan for about 3-4 minutes on each side or until the surface turns golden and crispy and the fish is cooked but still moist and pink in the center.
- Serve the warm salmon with a generous spoonful of green sauce on top or alongside.
