Salmon in Green Sauce

Ingredients

  • 4 slices of salmon (about 150-200 g each)
  • 2 tablespoons of extra virgin olive oil
  • Salt and pepper to taste
  • For the green sauce:
    • 1 bunch of parsley
    • A tuft of basil
    • A tuft of mint (optional)
    • 1 clove of garlic
    • Salted capers to taste
    • 6 anchovy fillets in oil
    • 1 tablespoon of Dijon mustard
    • The juice of 1 lemon
    • 100 ml of extra virgin olive oil
    • Salt and pepper to taste

Preparation

  1. Start with the green sauce. Wash and dry the parsley, basil, and mint. Finely chop the herbs with a knife or in the mixer along with the garlic clove, the previously desalted and well-drained capers, and the anchovy fillets.
  2. Transfer the mix into a bowl and add the mustard, lemon juice, and extra virgin olive oil. Mix well until you obtain a homogeneous sauce. Adjust with salt and pepper and set aside.
  3. Heat the extra virgin olive oil in a large pan over medium-high heat. Season the salmon slices with salt and pepper, and cook them in the pan for about 3-4 minutes on each side or until the surface turns golden and crispy and the fish is cooked but still moist and pink in the center.
  4. Serve the warm salmon with a generous spoonful of green sauce on top or alongside.
