Salmon en Papillote with Mixed Vegetables

Salmon en papillote is a light, flavorful, and also spectacular dish to present. Here is how to prepare it with mixed vegetables:

Ingredients

  • 4 salmon steaks (about 200g each)
  • 2 zucchinis
  • 2 carrots
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 small onion
  • Juice of 1 lemon
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Aromatic herbs to taste (for example, thyme, rosemary, parsley)
  • Parchment paper for the papillote

Preparation

  1. Preheat the oven to 200 °C.
  2. Wash and slice the zucchini and carrots into not too thin rounds, so that they maintain a certain texture during cooking. Cut the bell peppers into strips and the onion into rings.
  3. In a bowl, dress the cut vegetables with oil, salt, pepper, and finely chopped aromatic herbs. Mix well.
  4. Cut out four large sheets of parchment paper. On each sheet, arrange a base of mixed vegetables.
  5. Place a salmon steak on top of each vegetable base, season with salt and pepper, and drizzle with a bit of lemon juice.
  6. Close the papillotes by sealing the edges well to ensure that steam doesn’t escape during cooking.
  7. Put the papillotes on a baking sheet and bake in the hot oven for about 20-25 minutes.
  8. Once cooked, remove from the oven and let rest for a few minutes before serving. Be careful when opening the papillote because of the hot steam.
