Salmon and Zucchini Skewers

Ingredients

  • 500 g of fresh salmon fillet
  • 2 medium zucchinis
  • 1 lemon (both juice and grated zest)
  • 2 cloves of garlic
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Fresh chives or, alternatively, fresh parsley
  • Wooden or metal skewers

Preparation

  1. Start by soaking wooden skewers in cold water for about 30 minutes. This step is crucial if you’re using wooden skewers to prevent them from burning during cooking.

  2. Cut the salmon fillet into cubes of about 2-3 cm.

  3. Wash the zucchinis and cut them into round slices about 0.5 cm thick.

  4. Prepare a marinade by mixing in a bowl lemon juice, grated zest, extra virgin olive oil, finely chopped garlic, salt, and pepper.

  5. Place the salmon and zucchini in the marinade and let them rest for 15-20 minutes in the refrigerator.

  6. Prepare the skewers by alternating a piece of salmon and a zucchini slice until all ingredients are used.

  7. Heat a grill or grill pan over medium-high heat. If using a barbecue, make sure that the coals are at the right temperature.

  8. Cook the skewers for about 3-4 minutes per side, until the salmon easily flakes with a fork and the zucchinis are tender but still crisp.

  9. Serve the skewers hot, garnished with chopped chives or fresh parsley.
