Salmon and Zucchini Pasta

Ingredients

  • 320 grams of pasta (penne or bow-tie pasta work well)
  • 200 grams of smoked salmon
  • 2 medium zucchinis
  • 1 small onion
  • 200 ml of cooking cream
  • Extra virgin olive oil
  • Salt to taste
  • Pepper to taste
  • Dill or chives (optional for garnishing)
  • Grated Parmesan cheese (optional)

Preparation

  1. Start by bringing a pot of salted water to a boil for the pasta. Cook the pasta al dente following the instructions on the package.

  2. Meanwhile, wash and cut the zucchinis into rounds or small cubes. Also finely slice the onion.

  3. In a large pan, heat 2 tablespoons of olive oil and sauté the onion until it becomes translucent.

  4. Add the zucchini to the pan and let them cook for about 5-7 minutes, until they are slightly golden. Season with salt and pepper.

  5. Cut the smoked salmon into strips or cubes and add it to the zucchini, letting it flavor for a couple of minutes.

  6. Lower the flame and pour the cream into the pan. Let it cook for a few minutes, so that the salmon and zucchini can blend with the cream.

  7. Drain the pasta al dente and transfer it to the pan with the salmon and zucchini sauce.

  8. Mix the pasta well to evenly flavor it. If necessary, add a little pasta cooking water to make the sauce creamier.

  9. Serve hot, garnishing with chopped dill or chives and, if desired, a sprinkle of grated Parmesan cheese.
