Lasagne salmone e zucchine

Ingredients

  • 250 g of egg lasagna (fresh or dry pre-cook)
  • 300 g of smoked salmon
  • 2 medium zucchinis
  • 250 g of béchamel sauce
  • 200 g of mozzarella
  • 30 g of butter
  • Salt
  • Pepper
  • Dill or chives, according to preference

Preparation

  1. If you are using dry lasagna, start by soaking them in salted boiling water for the time indicated on the package, then drain them and dry them on a clean cloth. If you choose fresh lasagna, you can use them directly.

  2. Wash the zucchinis and cut them into rounds or sticks, then sauté in a pan with a drizzle of olive oil, salt and pepper until they are slightly golden.

  3. Cut the smoked salmon into strips and if you want, you can quickly sauté it in a pan with some butter, but this step is optional.

  4. Prepare a not-too-thick béchamel sauce. In a saucepan, melt the butter, add the flour stirring quickly to avoid lumps and add the hot milk, continuing to stir. Cook until the béchamel thickens, then season with salt, pepper, and a sprinkle of nutmeg.

  5. Now start assembling the lasagna. Grease the bottom of an oven dish lightly and spread a layer of béchamel. Cover with the lasagna, add the salmon, zucchinis and mozzarella cut into cubes or slices. Cover with another layer of béchamel.

  6. Continue alternating layers of lasagna, salmon, zucchinis, mozzarella, and béchamel until all ingredients are used, finishing with béchamel and a sprinkling of grated cheese if you desire a golden crust on top.

  7. Bake in a preheated oven at 180 °C for about 20-25 minutes, until the surface is golden and crispy.

  8. Let the lasagna rest for a few minutes before serving, this will make it easier to cut and allow the flavors to blend better.

For an even more Italian touch, you can flavor the béchamel with dill or chives, which go well with salmon, and if you like, add Parmesan cheese into the béchamel for an extra flavor.
