Salmon and Robiola Flan

Ingredients

  • 200 g smoked salmon
  • 200 g Robiola or another spreadable cheese
  • 1 tablespoon chopped fresh dill (or parsley if you prefer)
  • 1 tablespoon lemon juice
  • Black pepper to taste
  • Salt to taste
  • Whole-grain bread or crackers to serve

Preparation

  1. In a medium bowl, combine the Robiola with the chopped dill and lemon juice. Add a pinch of salt and pepper to taste. Mix well until you have a smooth and homogeneous cream.
  2. Line a series of individual molds or a single large mold with cling film, allowing it to exceed the edges so that you can then cover the top.
  3. Cover the bottom and sides of the molds with slices of smoked salmon, making sure to overlap them slightly and leaving an outer edge that will be used to close the flan.
  4. Fill the molds with the previously prepared Robiola cream, leveling the surface.
  5. Fold the outer edges of the smoked salmon inwards to close the flan. If necessary, use additional slices of salmon to cover any gaps.
  6. Cover with the excess cling film and refrigerate for at least 1 hour, so that the flan takes shape.
  7. When ready to serve, gently unmold the flan by removing the cling film and placing it on a serving plate. Serve it with toasted whole-grain bread or crispy crackers.
