Salmon and Ricotta Meatballs

Salmon and ricotta meatballs are a delicate and tasty dish that can be served as an appetizer or a light second course. Here is the recipe:

Ingredients

  • 300 g of fresh salmon
  • 250 g of ricotta
  • 1 egg
  • Breadcrumbs as needed
  • Finely chopped parsley as needed
  • Salt as needed
  • Pepper as needed
  • Grated zest of 1 lemon
  • Extra virgin olive oil (for frying, if you wish to cook them fried)

Preparation

  1. Begin by removing the skin and any bones from the salmon, and cut it into very small pieces.
  2. In a bowl, combine the ricotta, chopped salmon, finely chopped parsley, egg, a pinch of salt and pepper, and the grated lemon zest.
  3. Mix all the ingredients well until you obtain a homogeneous mixture. If the mixture is too moist, add breadcrumbs as needed to obtain the right consistency that allows you to form the meatballs.
  4. Shape small meatballs with your hands, using some breadcrumbs to prevent the mixture from sticking to your hands.
  5. If you prefer, you can now roll the meatballs in breadcrumbs to create a crispy crust on the outside.
  6. For cooking, you can choose between frying them in hot oil until golden or, for a lighter version, baking them in the oven at 180 °C for about 15-20 minutes, until they reach a nice golden color.
  7. Let the meatballs rest a few minutes on paper towels, if fried, before serving them.

Remember that you can serve these delicious meatballs with sauces of your liking, such as a simple mayonnaise flavored with chives or a touch of mustard, or a yogurt sauce with lemon and dill to stay in theme with the delicate flavors of the salmon.
