Salmon and Potato Croquettes
17/11/2023Preparing salmon and potato croquettes is a tasty and elegant idea for an appetizer or a delicious second course. Let’s take a look at the recipe together.
Ingredients
- 400 g of potatoes
- 200 g of fresh or smoked salmon
- 1 egg
- 2 tablespoons of breadcrumbs
- 2 tablespoons of grated cheese (Parmesan or Pecorino)
- Salt and pepper to taste
- Chopped chives (optional)
- Seed oil for frying
Preparation
-
Start by boiling the potatoes in salted water until they are soft. Once ready, drain them, peel them, and mash them with a potato masher to obtain a puree.
-
In the meantime, cook the salmon. If you have chosen fresh salmon, you can cook it in a pan with a drizzle of oil until it is ready and then crumble it. If you are using smoked salmon, it is ready to use and can be simply crumbled.
-
Add the salmon to the mashed potatoes along with the egg, breadcrumbs, grated cheese, salt, pepper, and, if you like, some chopped chives. Mix the ingredients well to obtain a homogeneous mixture.
-
Shape the mixture with your hands into croquettes, forming the oval or round shape you prefer.
-
Heat plenty of seed oil in a pan and fry the croquettes until they are golden on all sides. It will take about 3-4 minutes per side.
-
Once fried, place them on paper towels to remove excess oil.
-
Serve the croquettes hot, perhaps accompanied by a yogurt-based sauce or garlic mayonnaise.
Curiosity
Croquettes are a very versatile dish, originating from Europe, which can be prepared with a multitude of fillings such as meat, fish, or vegetables. They are perfect for giving new life to leftover ingredients and can be baked for a lighter version.
If you desire an even more Italian touch, you can add chopped parsley to the mixture and serve them with a touch of lemon, which pairs perfectly with the flavor of the fish.
