Salmon and Potato Croquettes

Ingredients

  • 400 g of potatoes
  • 200 g of fresh or smoked salmon
  • 1 egg
  • 2 tablespoons of breadcrumbs
  • 2 tablespoons of grated cheese (Parmesan or Pecorino)
  • Salt and pepper to taste
  • Chopped chives (optional)
  • Seed oil for frying

Preparation

  1. Start by boiling the potatoes in salted water until they are soft. Once ready, drain them, peel them, and mash them with a potato masher to obtain a puree.

  2. In the meantime, cook the salmon. If you have chosen fresh salmon, you can cook it in a pan with a drizzle of oil until it is ready and then crumble it. If you are using smoked salmon, it is ready to use and can be simply crumbled.

  3. Add the salmon to the mashed potatoes along with the egg, breadcrumbs, grated cheese, salt, pepper, and, if you like, some chopped chives. Mix the ingredients well to obtain a homogeneous mixture.

  4. Shape the mixture with your hands into croquettes, forming the oval or round shape you prefer.

  5. Heat plenty of seed oil in a pan and fry the croquettes until they are golden on all sides. It will take about 3-4 minutes per side.

  6. Once fried, place them on paper towels to remove excess oil.

  7. Serve the croquettes hot, perhaps accompanied by a yogurt-based sauce or garlic mayonnaise.
