Tagliolini with Salmon and Peas

Tagliolini with salmon and peas is a delicious and simple dish to prepare. Here is a typical recipe that you can follow.

Ingredients

  • 250 g of tagliolini (or your preferred long pasta)
  • 200 g of smoked salmon
  • 150 g of peas, fresh or frozen
  • 1 shallot
  • 200 ml of cooking cream
  • Extra virgin olive oil
  • Salt and pepper to taste
  • A pinch of chopped chives (optional)

Preparation

  1. Bring a pot of salted water to a boil for the pasta. Meanwhile, in a large pan, gently sauté the finely chopped shallot in a drizzle of extra virgin olive oil.
  2. Add the peas and cook for about 5 minutes (if fresh, they may require a few more minutes). Lightly salt.
  3. Cut the smoked salmon into strips and add it to the peas, letting it flavor for a couple of minutes.
  4. Pour the cooking cream into the pan and cook until it starts to simmer, then lower the heat and let it thicken for a few minutes. Adjust with salt and pepper.
  5. Meanwhile, cook the tagliolini in boiling salted water according to the package instructions to achieve the desired texture (al dente).
  6. Drain the pasta and transfer it to the pan with the salmon and pea sauce, mixing well to combine the ingredients.
  7. If desired, add a pinch of chopped chives to give a touch of freshness and color to the dish.
  8. Plate the tagliolini and serve immediately, nice and hot.

Trivia

The combination of smoked salmon and peas is highly appreciated in contemporary cuisine for its sweet and salty flavor contrast, as well as for the variety of textures. Tagliolini, with their thin and delicate shape, exceptionally gather the sauce, making each bite rich and flavorful.
