Pasta with Salmon and Mushrooms
17/11/2023Pasta with salmon and mushrooms is a great dish that combines flavors of the sea and the earth. Here is how to prepare an Italian variant of this international dish.
Ingredients
- 320 grams of pasta (penne, farfalle, or tagliatelle)
- 200 grams of smoked salmon
- 250 grams of champignon mushrooms
- 1 clove of garlic
- 1 shallot (or small onion)
- 200 ml of heavy cream
- Salt and pepper to taste
- Extra virgin olive oil
- A bunch of fresh parsley
- Optionally, a shot of vodka
Preparation
- Clean the mushrooms carefully with a damp cloth or a small brush, slice them, and set them aside.
- Cut the smoked salmon into strips and also set it aside.
- Finely chop the shallot (or onion) and garlic. In a large pan, sauté the shallot and garlic in extra virgin olive oil until they become translucent.
- Add the mushrooms to the pan, raise the heat slightly, and cook them until they have released their water and it has evaporated. Lightly salt them.
- Lower the heat again and add the smoked salmon, letting it flavor for a couple of minutes.
- If you decide to use vodka, pour it into the pan now and let the alcohol evaporate.
- Add the cream to the pan, season with salt and pepper, and let the sauce thicken slightly on low heat.
- In the meantime, bring a pot of salted water to a boil and cook the pasta according to the package instructions until al dente.
- Drain the pasta while saving some of the cooking water and pour the pasta into the pan with the salmon and mushroom sauce. Stir well, adding a little cooking water if necessary to keep the sauce creamy.
- Plate and garnish with chopped parsley to taste.
