Salmon and Avocado Tartare

Ingredients

  • 200 g of very fresh salmon
  • 1 ripe avocado
  • 1 lemon (juice and grated zest)
  • Salt and pepper to taste
  • Extra virgin olive oil
  • A sprig of dill (or, if you prefer, chives)
  • Toasted sesame seeds (optional)

Preparation

  1. Start with the salmon: after purchasing it, make sure it’s suitable for raw consumption and, if necessary, freeze it for at least 48 hours at -20 °C to pasteurize it, that is to make any parasites harmless. Once thawed, with a very sharp knife, cut the salmon into small cubes of about half a centimeter.
  2. Take the avocado, cut it in half removing the pit, and with the help of a spoon, scoop out the pulp. Cut the avocado into cubes similar to those of salmon.
  3. In a bowl, gently mix the cubes of salmon and avocado. Add the lemon juice to prevent the avocado from oxidizing and to flavor the fish. Season with the grated lemon zest, salt, pepper, and a drizzle of extra virgin olive oil.
  4. Chop the dill or chives finely and incorporate them into the mixture.
  5. For a crunchy touch, add toasted sesame seeds.
  6. Let the tartare rest in the refrigerator for about 10-15 minutes before serving. This step helps the flavors to meld together well.
  7. Serve the tartare using a ring mold to give it a neat shape on the plate, or simply lay it gently on a bed of salad greens or in the center of a plate.
