Balsamic Strawberry Salad

Ingredients

  • 150 g of arugula
  • 200 g of strawberries
  • 80 g of goat cheese (or another soft cheese)
  • 30 g of toasted pine nuts
  • Balsamic vinegar, to taste
  • Extra virgin olive oil, to taste
  • Salt, to taste
  • Black pepper, to taste
  • Honey, if you wish to sweeten the reduction, 1 tablespoon (optional)

Preparation

  1. Start by washing the arugula and strawberries. Dry them gently and slice the strawberries or cut them into pieces, according to your preference.
  2. Toast the pine nuts in a pan over low heat until they become golden, then let them cool.
  3. For the balsamic reduction, pour the balsamic vinegar into a small pot and, if desired, add a tablespoon of honey for a balanced sweetness. Simmer over low heat until it reduces by about a third and thickens. Let it cool.
  4. In a large bowl, combine the arugula with a drizzle of extra virgin olive oil and a pinch of salt, mixing well.
  5. Divide the arugula onto serving plates, add the strawberry slices, and then sprinkle with the crumbled goat cheese and toasted pine nuts.
  6. Dress the salad with the balsamic reduction, and season with salt and freshly ground black pepper to taste.
