Pineapple Shrimp Salad

Ingredients
- 1 ripe pineapple
- 400 g of shrimp, already cleaned
- Mixed salad to taste (lettuce, arugula, radicchio, etc.)
- 1 ripe avocado
- 1 lime (or lemon)
- Extra virgin olive oil
- Salt to taste
- Black pepper to taste
- Aromatic herbs to taste (cilantro, mint, parsley)
Preparation
- Cut the pineapple in half lengthwise, leaving the green tuft intact for a decorative effect.
- With a sharp knife, remove the pineapple pulp being careful not to pierce the skin. Cut the pulp into cubes, removing the harder central part.
- Boil the shrimp in salted water for about 2-3 minutes. Drain them and let them cool.
- In the meantime, wash and dry the salad and cut it into strips.
- Peel the avocado, remove the pit and cut it into cubes, then drizzle it with lime juice to prevent it from browning.
- In a large bowl, combine the pineapple cubes, the cooled shrimp, the salad, and the avocado. Dress with oil, salt and pepper, and add the chopped aromatic herbs.
- Fill the empty pineapple halves with the dressed salad.
- Serve the salad directly in the pineapple for a dish that is also a delicious presentation.
