Salad with Burrata and Grilled Peaches
17/11/2023The salad with burrata and grilled peaches is a fresh and summery dish that skillfully balances the creaminess of burrata with the sweetness of the peaches and a touch of smokiness from the grilling. Here’s the recipe:
Ingredients
- 2 mature but still firm peaches
- 1 burrata of about 200 g
- Mixed salad greens to taste (for example, arugula, lettuce, baby spinach)
- Extra virgin olive oil
- Balsamic vinegar or balsamic reduction
- Salt and pepper to taste
- Fresh mint (optional)
- Walnuts or toasted pine nuts for added crunch (optional)
Preparation
- Preheat a grill or grill pan over medium-high heat.
- Wash the peaches, cut them in half and remove the stone. Slice each half into not too thin wedges.
- Lightly oil the peach slices with a drizzle of oil and place them on the hot grill. Grill for about 2-3 minutes per side, until they have obtained nice caramelized grill marks. Turn them gently to avoid breaking.
- Meanwhile, wash and dry the mixed salad greens well. Arrange them in the center of a serving plate as a base.
- Once grilled, allow the peaches to cool slightly.
- When ready to serve, place the burrata in the center of the salad and distribute the grilled peach wedges around it.
- Dress with a drizzle of extra virgin olive oil, balsamic vinegar, salt, and a grind of fresh pepper.
- If you wish, add a handful of fresh mint leaves and scatter some toasted walnuts or pine nuts for a crunchy touch.
Serve this fresh salad as an appetizer or a single course for a light lunch. The combination of sweet, creamy, and slightly bitter flavors makes it perfect for a warm day.
Curiosity
Burrata is a typical cheese from Southern Italy, particularly from Puglia. It resembles mozzarella but has a soft and creamy heart of stracciatella and cream. Its sweetness pairs well with both fresh and cooked fruit, creating surprising combinations like the one with grilled peaches. This dish is an example of how traditional Italian products can be reinterpreted in a modern and fresh way.
