Penne with Saffron en Papillote

Ingredients

  • 320g of ridged penne
  • 1 packet of saffron
  • 200ml of cooking cream
  • 100g of diced cooked ham
  • 100g of thinly sliced champignon mushrooms
  • 50g of grated Parmesan cheese
  • Salt and pepper to taste
  • Extra virgin olive oil
  • Parchment paper

Preparation

  1. Bring a pot of plenty of salted water to a boil and cook the ridged penne until they are al dente. Drain and set aside.
  2. In the meantime, in a large pan, heat a drizzle of oil and sauté the champignon mushrooms for a couple of minutes. Add the diced cooked ham and sauté for a few minutes.
  3. Dissolve the saffron in a little hot water and pour it into the pan with the mushrooms and ham. Mix well.
  4. Add the cooking cream, adjust with salt and pepper, and bring to a gentle boil, letting it simmer for a few minutes.
  5. Prepare sheets of parchment paper large enough to accommodate the portions of pasta.
  6. Pre-heat the oven to 200 °C.
  7. Combine the penne with the saffron and cream in the pan and stir well to evenly flavor the pasta.
  8. Distribute the mixture of penne onto the sheets of parchment paper, sprinkle with grated Parmesan cheese, and close the parchment packets well.
  9. Bake the packets on a baking tray for about 10 minutes, until the paper becomes slightly golden.
  10. Serve the packets still closed, so that those ready to enjoy the dish can delight in the surprise effect and the aroma that will be released upon opening.
