Saffron Tagliatelle with Chicken and Guanciale

Ingredients

  • 250g of egg tagliatelle
  • 2 sachets of powdered saffron
  • 200g of chicken breast
  • 100g of guanciale

  • 200ml of cooking cream
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)
  • Chicken or vegetable broth (if necessary)

Preparation

  1. Start by cutting the guanciale into small cubes and the chicken breast into strips or cubes. Set aside.
  2. Thinly slice the shallot and sauté in a pan with a drizzle of extra virgin olive oil.
  3. Add the guanciale to the pan and let it brown until it becomes crispy.
  4. Add the chicken strips and cook until golden brown, making sure the chicken is well cooked.
  5. Dissolve the saffron in a little hot broth or alternatively in warm cream to enhance its aroma and color.
  6. Pour the dissolved saffron into the pan with the chicken and guanciale, mix well to flavor and let cook for a few minutes.
  7. In the meantime, bring a pot of salted water to a boil and cook the tagliatelle al dente following the instructions on the package.
  8. When the pasta is ready, drain it and pour it directly into the pan with the chicken and guanciale sauce.
  9. Add the cooking cream to the tagliatelle, mix everything well to blend the ingredients. If necessary, add some of the tagliatelle cooking water to make the sauce creamier.
  10. Season with salt and pepper to taste and, if you wish, sprinkle with grated Parmesan cheese.
