Sacher cupcake
17/11/2023Here is a recipe that combines the traditional flavor of the Sacher torte with the convenience and charm of cupcakes. You will see some typical ingredients from Austria, but I will try to give it an Italian touch where possible.
Ingredients
- 125 g of soft butter
- 125 g of powdered sugar
- 1 packet of vanillin or a teaspoon of vanilla extract
- 6 medium eggs (yolks and whites separated)
- 125 g of dark chocolate
- 125 g of almond flour (or finely chopped almonds)
- 50 g of 00 flour
- 1/2 teaspoon of baking powder
- Pinch of salt
- Apricot jam
For the chocolate glaze:
- 200 g of quality dark chocolate
- 150 g of fresh cream
- 40 g of butter
Preparation
- Preheat the oven to 180°C and prepare a cupcake tray with paper liners.
- Melt the chocolate in a double boiler or microwave and let it cool slightly.
- Whisk the butter with the powdered sugar and vanillin until it becomes light and fluffy.
- Add the egg yolks, one at a time, incorporating well after each addition.
- Mix in the cooled melted chocolate.
- Combine almond flour with 00 flour and baking powder, then sift them and fold gently into the mixture of butter, sugar, and eggs.
- Beat the egg whites until stiff with a pinch of salt and fold them gently into the rest of the batter.
- Fill the paper liners about 2/3 full and bake in the oven for about 20-25 minutes or until a toothpick inserted into the center of the cupcakes comes out clean.
- Once baked, let the cupcakes cool completely before proceeding with the filling.
- To fill, use a piping bag to insert a little apricot jam into the center of each cupcake.
- To prepare the glaze, heat the cream until it almost boils and pour over the chopped chocolate. Let it rest for a minute and then mix until it becomes a smooth cream. Add the butter in pieces and stir until completely melted.
- Cover the cupcakes with chocolate glaze and let it set.
Once completed, you will have delicious Sacher cupcakes that will surely satisfy the craving for something sweet and chocolatey, combining the sophistication of the Sacher torte with a playful and personal note of cupcakes.
Trivia
The Sacher torte was created in Vienna in 1832 by the pastry chef Franz Sacher. Traditionally it consists of two layers of chocolate sponge cake separated by a thin layer of apricot jam and covered with a dark chocolate glaze.
