Zucchini Rustic Pizza

Ingredients
- For the dough:
- 500 g of flour
- 250 ml of warm water
- 25 g of fresh brewer’s yeast
- 1 teaspoon of sugar
- 2 tablespoons of extra virgin olive oil
- A pinch of salt
- For the filling:
- 4 medium zucchini
- 200 g of sweet provola (or mozzarella)
- 100 g of diced cooked ham
- 3 eggs
- 50 g of grated Parmesan cheese
- Salt and pepper to taste
- A drizzle of extra virgin olive oil
Preparation
- Start by preparing the dough: dissolve the brewer’s yeast in warm water with the teaspoon of sugar. In a bowl, pour the flour and add the salt, the oil, and the dissolved yeast. Knead until you get a smooth and homogeneous ball. Cover with a cloth and let it rise for about 2 hours.
- In the meantime, wash and slice the zucchini into thin rounds. If you prefer, you can also lightly grill them to enhance their flavor.
- In a bowl, beat the eggs and incorporate the grated Parmesan, adding salt and pepper to taste.
- Add the zucchini, the diced cooked ham, and the cubed provola to the egg mixture. Mix well to evenly distribute the ingredients.
- Once the dough has doubled in volume, divide it into two parts.
- Roll out one of the parts with a rolling pin and place it on a lightly greased baking tray, making sure to create a high edge.
- Pour the filling onto the rolled-out dough and roll out the other part of the dough on top of the filling, sealing the edges well.
- Prick the surface of the rustic pizza with the tines of a fork to prevent it from puffing up too much during cooking.
- Bake at 180 °C for about 30 minutes, or until the surface is golden brown and crispy.
- Allow to cool before serving.
