For the brisée pastry:
- 200 g of type 00 flour
- 100 g of cold butter, cubed
- A pinch of salt
- 3-4 tablespoons of cold water

- 250 g of stracchino cheese
- 200 g of red radicchio
- 1 small onion
- 2 tablespoons of extra virgin olive oil
- Salt and pepper to taste
- 1 tablespoon of balsamic vinegar (optional)
- 1 tablespoon of sugar (to caramelize the radicchio, if desired)

For the brisée pastry: Start by pouring the flour onto a work surface, add the cold butter cubes and salt. Work quickly with your fingertips until the mixture is sandy. Add cold water little by little and continue to work until you get a smooth dough. Shape into a ball, wrap in plastic wrap and let rest in the refrigerator for at least 30 minutes.
