Rustic skewers with saffron rice
17/11/2023I present to you a recipe for rustic skewers with a side of saffron rice. This combination brings together robust and delicate flavors for a tasty and colorful dinner.
Ingredients for Rustic Skewers:
- 400 g of pork meat, cut into cubes
- 2 bell peppers (one red and one yellow), cut into pieces
- 1 large onion, cut into pieces
- 200 g of sausage, cut into pieces
- Salt and pepper to taste
- Extra virgin olive oil
- Finely chopped fresh rosemary
- Bay leaves (a few leaves to season)
Ingredients for Saffron Rice:
- 350 g of Carnaroli or Arborio rice
- 1 packet of powdered saffron
- 1 small onion, finely chopped
- Vegetable broth as needed
- 50 g of butter
- 50 g of grated Parmesan cheese
- Salt to taste
- Extra virgin olive oil
Preparation of Rustic Skewers:
- Prepare the skewers by alternating pieces of pork, sausage, bell peppers, and onion until the sticks are filled.
- Brush the skewers with a little oil and sprinkle them with the chopped rosemary, salt, and pepper.
- Place some bay leaves on the grill of the barbecue or a very hot plate and lay the skewers on it to cook. Turn the skewers regularly to cook them evenly on all sides.
- Continue cooking until the meat is golden and properly cooked.
Preparation of Saffron Rice:
- In a saucepan, sauté the chopped onion with a drizzle of oil until it becomes translucent.
- Add the rice and toast it for a few minutes until the grains become shiny.
- Dissolve the saffron in a little hot broth and add it to the rice, stirring.
- Continue cooking by gradually adding the hot broth, stirring occasionally until the rice is cooked al dente.
- Off the heat, cream the rice with butter and Parmesan, adjust for salt if necessary.
Serve the hot skewers accompanied by the saffron rice for a dinner rich in flavors and colors.
