Rustic Potato and Tuna Pastry

Ingredients
- 1 roll of ready-made puff pastry
- 500g of potatoes
- 200g of oil-packed tuna, drained
- 100g of grated cheese (e.g., Parmesan or Pecorino)
- 1 small onion
- 2 tablespoons of salted capers, rinsed
- Chopped parsley, to taste
- Salt and pepper, to taste
- 1 egg (for brushing)
- Pitted black olives (optional)
Preparation
- Preheat the oven to 180°C.
- Wash the potatoes, cook them in boiling water until soft, then peel them and mash them with a fork to obtain a purée.
- Chop the onion and let it wilt in a pan with a drizzle of oil until it becomes transparent.
- In a bowl, mix the mashed potatoes with the tuna, wilted onion, grated cheese, capers, and chopped parsley. Season with salt and pepper.
- Roll out the puff pastry on a baking sheet lined with parchment paper.
- Spread the filling in the center of the pastry, leaving about a 2 cm border free.
- If you like, add chopped black olives on top of the filling.
- Fold the edges of the pastry inward to contain the filling.
- Beat the egg and brush the surface of the pastry to give it color and crispiness during baking.
- Bake for about 25-30 minutes or until the pastry is golden and crispy.
- Let it cool slightly before serving.
