Rustic Potato Pie

Ingredients

  • 1 kg of potatoes
  • 300 g of flour
  • 200 g of cooked ham, diced
  • 150 g of mozzarella or scamorza cheese, diced
  • 100 g of grated Parmesan cheese
  • 4 eggs
  • 100 ml of milk
  • Nutmeg, to taste
  • Salt and pepper, to taste
  • Butter for greasing the pan
  • Breadcrumbs for sprinkling the pan

Preparation

  1. Start by peeling the potatoes and cutting them into cubes. Cook them in a pot of salted water until they are tender. Then, drain them and mash them with a potato masher or a fork to obtain a puree.

  2. Preheat the oven to 180 °C.

  3. In a large bowl, mix the potato puree with the cooked ham, mozzarella or scamorza, grated Parmesan, eggs, milk, a pinch of nutmeg, salt, and pepper until you have a homogeneous mixture.

  4. Grease a high-sided baking dish and sprinkle it with breadcrumbs. Pour the potato mixture into the dish and level the surface with a spoon or a spatula.

  5. Bake in the oven for about 45-60 minutes or until the pie’s surface becomes golden and crispy.

  6. Let the rustic potato pie rest for a few minutes before serving, so it can firm up slightly.
