Rustic lemon biscuits

Rustic lemon biscuits are a simple and fragrant sweet treat, perfect to accompany tea or as a light dessert. Here’s the recipe to prepare them:

Ingredients

  • 300 g of 00 flour
  • 100 g of granulated sugar
  • 100 g of butter at room temperature
  • 1 large egg
  • The grated zest of 2 untreated lemons
  • 1 teaspoon of baking powder
  • A pinch of salt
  • Powdered sugar (optional)

Preparation

  1. In a large bowl, mix the flour with the sugar, baking powder, and a pinch of salt.
  2. Add the butter cut into small pieces and start working the mixture with your hands until you obtain a crumbly dough.
  3. Add the egg and the grated lemon zest. Knead until you have a smooth dough.
  4. Wrap the dough in cling film and let it rest in the refrigerator for at least 30 minutes.
  5. Preheat the oven to 180 °C.
  6. Roll out the dough to about 1 cm thick on a lightly floured surface.
  7. Cut the biscuits with a cookie cutter of your choice or simply with a knife, giving them the shape you prefer.
  8. Place the biscuits on a baking tray lined with parchment paper, ensuring to leave some space between each one.
  9. Bake for about 15-20 minutes, or until the biscuits are slightly golden at the edges.
  10. Once ready, let the biscuits cool on the tray for a few minutes, then transfer them to a wire rack to cool completely.
  11. If desired, you can sprinkle the biscuits with powdered sugar before serving.

Curiosity

Lemon biscuits are a classic of home baking and, thanks to their aromaticity, lend themselves to many variations. In this case, we have chosen a rustic and simple version, but you could enrich the dough with coarsely chopped almonds for an extra touch, or dip them partially in melted chocolate once cooled, for a more indulgent version.
