Rustic Lasagna with Treviso Radicchio

Ingredients
- 250 g of fresh lasagna sheets (egg pasta)
- 300 g of Treviso radicchio
- 250 g of fresh ricotta
- 200 g of taleggio cheese
- 100 g of grated parmesan cheese
- 1 small onion
- 2 tablespoons of extra virgin olive oil
- Salt and pepper to taste
- Nutmeg to taste
- Butter for the baking dish
Béchamel sauce:
- 500 ml of milk
- 50 g of flour
- 50 g of butter
- Salt to taste
- Nutmeg to taste
Preparation

Start by preparing the béchamel sauce: melt the butter in a saucepan, then add the flour, mixing well to avoid lumps. Gradually pour in the hot milk, stirring continuously, and cook over medium heat until the béchamel is thick and smooth. Season with salt and nutmeg to taste.

Clean the radicchio, cut it into thin strips, and let it wilt in a pan with a drizzle of oil and finely chopped onion. Cook for about 10 minutes over medium heat, adding salt and pepper to taste. Deglaze with a little water if necessary to prevent sticking.

Mix the ricotta with the grated parmesan cheese in a bowl, and season with a pinch of salt, pepper, and nutmeg.

Butter a baking dish and start assembling the lasagna by alternating layers of pasta sheets, béchamel sauce, the ricotta and Parmesan mixture, the stewed radicchio, and cubes of taleggio until all ingredients are used up. Make sure to finish with a layer of béchamel and sprinkle the last with parmesan.

Bake in a preheated oven at 180° C for about 25-30 minutes, until the surface is golden brown and crispy.

Let the lasagna rest for a few minutes before serving to allow the layers to settle.
