Russian Chicken Salad

I can provide you with the recipe for Russian salad, which is sometimes also called Olivier salad. This dish is a classic of Russian cuisine that has spread in various forms around the world. Traditionally, it includes chicken or other meat, potatoes, peas, hard-boiled eggs, carrots, and mayonnaise. However, there are many variants that can include other ingredients.

Here is a basic version of the Russian salad with chicken:

Ingredients

  • 2 boiled chicken breasts, diced
  • 3 medium boiled potatoes, diced
  • 3 medium boiled carrots, diced
  • 150 g of boiled peas (can also be frozen)
  • 4 hard-boiled eggs, diced
  • 300 g of mayonnaise
  • Salt and pepper to taste
  • Chopped chives for garnish (optional)

Preparation

  1. If you haven’t already boiled the chicken, potatoes, carrots, and peas, you will need to do so now. Make sure to cool the ingredients before combining them.
  2. Once chicken, potatoes, carrots, and peas are cool, dice them all into more or less the same size.
  3. In a large bowl, gently combine the chicken, potatoes, carrots, peas, and hard-boiled eggs.
  4. Add the mayonnaise and mix everything carefully until the ingredients are well blended. Season with salt and pepper to taste.
  5. Put the salad in the fridge for at least an hour before serving to allow the flavors to blend.
  6. Before serving, you can garnish the salad with chopped chives for a touch of color and freshness.

This salad is perfect for a light summer lunch or as a starter in a more formal dinner. You can adjust the amount of mayonnaise to your taste, or replace it with Greek yogurt if you prefer something lighter.
