Rosti

Rösti is a traditional Swiss dish, particularly from the German-speaking region, but naturally I can suggest a version with an Italian twist. This dish is simple and delicious, made primarily from grated potatoes that are pan-fried until crispy. Here is how to prepare an Italian-style Rösti:

Ingredients

  • 4 large potatoes, preferably floury
  • 2 tablespoons of butter

  • Salt and pepper to taste

Preparation

  1. Peel the potatoes and grate them coarsely. Put them in a clean cloth and wring well to eliminate excess water.
  2. In a large pan, melt the butter with the olive oil.

  4. Cook over medium-high heat for about 10-15 minutes or until the bottom is golden and crispy.
  5. With the help of an upside-down plate, flip the Rösti to cook the other side, cooking for another 10-15 minutes.
  6. Once golden on both sides, the Rösti is ready to be served, perhaps accompanied by a fresh salad or a soft cheese.

Rösti was originally a dish of the farmers in the Canton of Bern to be eaten for breakfast, but today it is enjoyed throughout Switzerland and beyond, often served as a side dish.
