Salmon Mushroom and Sautéed Spinach Roll

  2. Heat a drizzle of extra virgin olive oil in a pan and sauté a clove of garlic to flavor the oil, then remove it.
  3. Add the spinach to the pan and cook until wilted. Remove the spinach from the pan and set aside.
  4. In the same pan, cook the mushrooms until they have released all their water and are golden. Season with salt and pepper to taste.
  5. Lay out the puff pastry on a work surface and arrange the slices of smoked salmon to cover the entire surface.
  6. Evenly distribute the well-squeezed spinach and mushrooms over the salmon. If you want a creamier variant, you can mix the spinach and mushrooms with the cream and then spread the mixture onto the pastry.
  7. Gently roll up the puff pastry with the filling inside, making sure to seal the edges well.
  8. Brush the surface of the roll with the beaten egg yolk.
