Girella Cake

The girella cake is a beloved dessert because it reminds people of industrial snack cakes, but when made at home it’s even better! Here’s how to make a homemade version of this delicious sweet:

Ingredients

  • 3 eggs
  • 100 g of sugar
  • 90 g of 00 flour
  • 30 g of unsweetened cocoa powder
  • A pinch of salt
  • 1/2 sachet of baking powder
  • Icing sugar (for dusting)
  • 200 g of Nutella or hazelnut spread to fill

Preparation

  1. Preheat the oven to 180° C.
  2. Separate the yolks from the whites. Whip the whites to stiff peaks with a pinch of salt.
  3. In another bowl, beat the yolks with the sugar until they become light and fluffy.
  4. Add the sifted flour, cocoa, and baking powder to the whipped yolks, gently mixing with a spatula from top to bottom so as not to deflate the mixture.
  5. Gently fold in the stiff egg whites, still stirring from top to bottom.
  6. Spread the mixture on a baking tray lined with parchment paper, forming a rectangle about 1 cm thick.
  7. Bake for about 10 minutes, being careful not to cook it too much in order to maintain the softness and elasticity needed to roll it.
  8. Once baked, flip the sponge cake onto a damp kitchen towel and dust with icing sugar. Gently remove the parchment paper.
  9. Spread the Nutella or hazelnut cream over the entire surface.
  10. With the help of the kitchen towel, roll the cake up on itself to form a cylinder. Make sure the roll is tight but do not compress it too much to avoid the filling spilling out.
  11. Wrap the roll in plastic wrap and let it rest in the fridge for about an hour so that it retains its shape.
  12. Before serving, dust with additional icing sugar if desired.

The girella cake takes inspiration from classic industrial snack cakes, but in the homemade version, we can control the quality of the ingredients and adapt it to any dietary need by changing the type of flour or using organic or homemade hazelnut creams.
