Ingredients

  • 1 roll of puff pastry or shortcrust pastry
  • 200 g of ricotta
  • 100 g of washed and dried arugula
  • 2 eggs

Preparation

  1. Preheat the oven to 180° C.
  2. Roll out the puff pastry or shortcrust pastry in a round baking pan, previously greased with a bit of oil or lined with parchment paper. Prick the base with a fork to avoid it puffing up too much during baking.
  3. In a bowl, blend the ricotta with the eggs, Parmesan, salt, and pepper until you obtain a homogeneous mixture.
  4. Add the chopped arugula to the ricotta and egg mixture and mix gently to distribute the greens evenly.
  5. Pour the filling onto the pastry base in the baking pan and level it with a spatula.
  6. Bake the savory pie for about 25-30 minutes or until the surface is golden brown and the pastry is cooked.
  7. Let the arugula savory pie cool down a bit before serving it.
