Roasted Pumpkin

Roasted pumpkin is an autumn classic, simple yet incredibly tasty. Here’s how to prepare it:

Ingredients

  • 1 medium pumpkin (butternut, Hokkaido, or another variety suitable for cooking)
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Aromatic herbs of your choice (rosemary, thyme, sage, etc.)
  • Garlic powder or whole garlic cloves (optional)

Preparation

  1. Preheat the oven to 200 °C.

  2. Clean the pumpkin by removing seeds and stringy bits, then cut it into slices or pieces, leaving the skin on or off according to preference and the pumpkin variety.

  3. Place the pumpkin pieces on a baking tray lined with parchment paper.

  4. Generously sprinkle with extra virgin olive oil, salt, pepper, and chopped aromatic herbs. If you wish, you can also add garlic powder or whole garlic cloves.

  5. Mix well so that all the pieces are evenly seasoned.

  6. Roast the pumpkin in the preheated oven for about 30-40 minutes or until tender and the edges start to caramelize, turning the pieces once halfway through to ensure an even browning.

Roasted pumpkin is great served hot as a side or cold, added to salads. You can vary the flavors by using other spices such as paprika, cinnamon, or cumin to give a different taste each time. Enjoy your meal!
