Roasted Potato Towers

Ingredients

  • 4 medium-sized potatoes

Preparation

  1. Preheat the oven to 200 °C (392 °F).
  2. Wash and peel the potatoes, then slice them into thin slices about 2-3 mm with a mandoline or a very sharp knife to have uniform slices.
  3. In a large bowl, season the potato slices with extra virgin olive oil, salt, pepper, chopped aromatic herbs, and garlic powder, if using. Mix well.
  4. Take a baking sheet and, if necessary, grease it lightly with a bit of oil. Start forming the towers by stacking the potato slices on top of each other vertically, as if they were coins stacked. You could also use muffin molds to support the towers during cooking.
  5. If you have chosen to add Parmesan cheese, sprinkle a bit of cheese between the potato layers for an extra touch of flavor and a golden crispness.
  6. Bake the towers for about 45 minutes or until the potatoes have turned golden and crispy on the edges.
  7. Allow them to cool for a few minutes before serving. Using a spatula, gently remove them and place them on serving plates.
