Baked Kid Goat with Pistachios

Ingredients

  • 1.5 kg of kid goat meat (leg or shoulder)
  • 150 g of shelled pistachios
  • 4 cloves of garlic
  • 1 sprig of rosemary
  • 4-5 sage leaves
  • Extra virgin olive oil to taste
  • Salt and pepper to taste
  • 1 glass of white wine
  • Water or meat broth as needed

Preparation

  1. Preheat the oven to 180 °C (350 °F).
  2. Prepare a marinade by pounding 2 cloves of garlic, rosemary, and sage in a mortar, then add salt, pepper, and a drizzle of olive oil. Massage the kid goat with this mixture and let it rest for at least one hour.
  3. Roughly chop the pistachios and reserve some for the final garnish.
  4. In a casserole dish big enough to contain the kid goat, heat a drizzle of olive oil and sear the kid goat on all sides until a beautiful golden crust forms.
  5. Add the other 2 crushed cloves of garlic and deglaze with the white wine.
  6. Sprinkle the kid goat with the chopped pistachios and add a bit of broth or water to prevent the meat from drying out too much during cooking.
  7. Cover with aluminum foil and place in the oven for about 1 hour and 30 minutes, basting occasionally with the cooking juices.
  8. In the last 15 minutes of cooking, remove the aluminum foil to let the surface gratinate.
  9. Once cooked, let the kid goat rest in the turned-off oven for a few minutes before serving.

Serve the kid goat sliced and garnished with the reserved pistachios, perhaps accompanied by baked potatoes or a side of seasonal vegetables.
