Risotto with Mushrooms and Stracchino Cheese

Here is the recipe for mushroom risotto with stracchino, a creamy and flavorful dish that combines the autumnal taste of mushrooms with the sweetness of the namesake cheese.

Ingredients

  • 320 g of risotto rice (such as Arborio or Carnaroli)
  • 300 g of fresh mushrooms (such as porcini, champignon or mixed)
  • 100 g of stracchino cheese
  • 1 small shallot or 1/2 white onion
  • 1 liter of vegetable broth
  • 1/2 glass of dry white wine
  • Extra virgin olive oil
  • Chopped fresh parsley
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)

Preparation

  1. Clean the mushrooms carefully with a damp cloth or a brush, then slice them. If using porcini mushrooms, remember they can be gritty, so they may require a quick rinse and then immediate drying to avoid soaking up water.

  2. In a pan, sauté the finely chopped shallot in a drizzle of extra virgin olive oil until it becomes translucent.

  3. Add the sliced mushrooms to the pan and sauté over medium-high heat until they release their water and begin to brown. Season with salt and pepper to taste.

  4. In a large saucepan, toast the rice dry until it becomes translucent, then deglaze with white wine and let it evaporate.

  5. Start adding the vegetable broth, one ladle at a time, waiting for the rice to absorb almost all the liquid before adding the next one. Keep the flame at a medium level.

  6. About halfway through cooking the rice, add the mushrooms and continue to add broth.

  7. When the rice is cooked al dente (about 16-18 minutes), turn off the heat, adjust salt and pepper if necessary, and stir in the stracchino cheese cut into pieces. Mix well to allow the cheese to melt into the rice and create a cream.

  8. Let the risotto rest for a couple of minutes with the lid on, then serve hot with a sprinkle of fresh parsley and, if you like, a grating of Parmesan cheese.
