Risotto with Carrots and Sausage

Ingredients

  • 320 grams of risotto rice (such as Arborio, Carnaroli or Vialone Nano)

  • 40 grams of butter

Preparation

  1. To start, prepare the vegetable broth and keep it warm on another burner.
  2. Peel the carrots and cut them into small cubes or rounds, as you prefer.
  3. Finely chop the onion and sauté it with a drizzle of extra virgin olive oil in a wide, thick-bottomed pot.
  4. Take the sausages, remove the casing and crumble the meat.
  5. Add the crumbled sausage to the onion and cook until they are well browned.
  6. Add the carrots and let them flavor for a couple of minutes.
  7. Pour the rice into the pot and toast it for about a minute until it is well coated with oil and starts to become translucent.
  8. Deglaze with the white wine and let the alcohol evaporate.
  9. Start to add the hot broth, one ladle at a time, waiting for the rice to absorb the liquid before adding the next ladle.
  10. Adjust with salt and pepper during cooking.
  11. Continue cooking for about 18 minutes, or until the rice reaches a creamy but al dente consistency, adding enough broth as necessary.
  12. Once cooked, remove the risotto from the heat and stir in the butter and grated Parmesan, mixing well to combine the ingredients.
  13. Let it rest for a minute and serve hot.
