Risotto with Carrots and Sausage
17/11/2023Here is a great recipe for risotto with carrots and sausage, combining the sweet and earthy flavors of carrots with the full and savory taste of sausage. A deliciously Italian fusion of flavors.
Ingredients
- 320 grams of risotto rice (such as Arborio, Carnaroli or Vialone Nano)
- 2 pork sausages
- 3 medium carrots
- 1 small onion
- 1 liter of vegetable broth (you might need more or less depending on the rice’s absorption)
- ½ glass of dry white wine
- 40 grams of butter
- 40 grams of grated Parmesan cheese
- Extra virgin olive oil
- Salt and pepper to taste
Preparation
- To start, prepare the vegetable broth and keep it warm on another burner.
- Peel the carrots and cut them into small cubes or rounds, as you prefer.
- Finely chop the onion and sauté it with a drizzle of extra virgin olive oil in a wide, thick-bottomed pot.
- Take the sausages, remove the casing and crumble the meat.
- Add the crumbled sausage to the onion and cook until they are well browned.
- Add the carrots and let them flavor for a couple of minutes.
- Pour the rice into the pot and toast it for about a minute until it is well coated with oil and starts to become translucent.
- Deglaze with the white wine and let the alcohol evaporate.
- Start to add the hot broth, one ladle at a time, waiting for the rice to absorb the liquid before adding the next ladle.
- Adjust with salt and pepper during cooking.
- Continue cooking for about 18 minutes, or until the rice reaches a creamy but al dente consistency, adding enough broth as necessary.
- Once cooked, remove the risotto from the heat and stir in the butter and grated Parmesan, mixing well to combine the ingredients.
- Let it rest for a minute and serve hot.
