Asparagus Cream Risotto with Egg Yolk Crumbs

Ingredients
- 320 g of Carnaroli or Arborio rice
- 1 bunch of fresh asparagus (about 300 g)
- 1 small white onion
- 1 liter of vegetable broth
- 50 ml of dry white wine
- 50 g of butter
- 40 g of grated Parmesan cheese
- 2 egg yolks
- Salt and pepper to taste
- Extra virgin olive oil as needed
Preparation
- Clean the asparagus by removing the hardest part of the stem and cut the tips. Set the tips aside and slice the stems into rounds.
- Prepare a fine chop with the onion. In a large saucepan, sauté the onion with a drizzle of olive oil until it becomes transparent.
- Add the asparagus rounds to the sauté and let them flavor for a few minutes.
- Add the rice to the saucepan and toast it until it becomes translucent, then deglaze with white wine and let it evaporate.
- Start adding the hot broth one ladle at a time, stirring often and waiting for the rice to absorb the liquid before adding more.
- Halfway through the rice cooking time, add in the asparagus tips that you had set aside.
- Meanwhile, cook the egg yolks in a preheated oven at 75 °C for about 45 minutes or until they are semi-solid. Once ready, let them cool and crumble them finely with your hands or with a fork.
- When the rice is al dente, remove the saucepan from the heat and cream the risotto with butter and grated Parmesan cheese. Season with salt and pepper to taste.
- Let the risotto rest covered for a couple of minutes, then plate and complete each serving with the crumbled egg yolk.
