Rigatoni with Red Pepper Cream

Ingredients
- 350g of rigatoni
- 2 large red peppers
- 1 clove of garlic
- 100 ml of cooking cream
- 40g of grated Parmesan cheese
- Salt, pepper to taste
- Extra virgin olive oil
- Fresh basil (optional for garnishing)
Preparation
- Preheat the oven to 200 °C in grill mode. Wash the peppers, place them on a baking sheet lined with parchment paper and cook until the skin is charred and soft, turning them occasionally. This process usually takes about 20-30 minutes.
- Once cooked, put the peppers in a food plastic bag or in a bowl covered with cling film to let them “sweat”, thus facilitating the removal of the skin. Let them rest for 10 minutes.
- In the meantime, bring the water to a boil for the rigatoni in a large salted pot. Cook the pasta according to the instructions on the package, until it is al dente.
- Peel the peppers, also removing the stem, seeds, and inner membranes. Cut the flesh into pieces.
- In a frying pan, sauté the garlic with a drizzle of extra virgin olive oil. When it is golden brown, remove it and add the peppers to sauté for a few minutes.
- Transfer the peppers and their juice to a blender or use an immersion blender, blending until you obtain a smooth cream.
- Put the cream back in the pan over low heat, add the cooking cream and mix well. Season with salt and pepper and let the cream warm up.
- Drain the rigatoni, reserving some cooking water, and pour them into the pan with the pepper cream. Mix well to make the sauce adhere to the pasta, adding, if necessary, a little cooking water to make the sauce lighter.
- Serve the rigatoni, sprinkle with grated Parmesan, and, if you like, decorate with fresh basil leaves.
