Ingredients

  • 400 g of rigatoni or other short pasta
  • 400 g of pork sausage
  • 2 red bell peppers, cleaned and cut into strips
  • 2 yellow bell peppers, cleaned and cut into strips
  • 1 large onion, sliced
  • 2 cloves of garlic, crushed
  • Extra virgin olive oil
  • Salt and pepper to taste
  • White wine (optional)
  • Chopped fresh parsley (to garnish)

Preparation

  1. Peel the sausage and crumble it into a large pan with a drizzle of extra virgin olive oil. Let it brown until it starts to color.

  2. Add the onion and garlic to the sausage and cook until they become translucent. If you wish, you can deglaze with a bit of white wine.

  3. Add the sliced peppers, salt, and pepper to taste. Cover the pan with a lid and cook until the peppers are softened yet still crunchy.

  4. In the meantime, boil a pot of salted water and cook the rigatoni until it is al dente.

  5. Drain the pasta and keep a cup of the cooking water.

  6. Once the peppers are cooked, add the rigatoni to the pan with a bit of the cooking water and stir well to combine.

  7. Toss everything together for a minute or two, until the pasta is well seasoned.
