Ricotta Triangles with Taleggio and Pear

The ricotta triangles with taleggio and pear are a delicious appetizer that combines the sweetness of pears with the creaminess of cheeses. They are perfect for an elegant dinner or a gathering with friends. Here’s how to prepare them.

Ingredients

  • 250 g of ready-made puff pastry
  • 150 g of ricotta
  • 100 g of taleggio
  • 1 ripe but firm pear
  • 1 egg
  • Salt and pepper to taste
  • 1 tablespoon of honey (optional)
  • Chopped walnuts for garnishing (optional)

Preparation

  1. Preheat the oven to 180 °C (350 °F).
  2. Roll out the puff pastry and cut it into squares of about 8 cm on each side.
  3. In a bowl, mix the ricotta with a pinch of salt and pepper until you have a smooth mixture.
  4. Cut the taleggio into small pieces, being careful to remove the rind if not liked.
  5. Peel the pear and cut it into small cubes.
  6. Place a teaspoon of the ricotta mixture, a few pieces of taleggio, and a few cubes of pear in the center of each puff pastry square.
  7. Brush the edges of the puff pastry with a little water, then close the triangles by joining two opposite corners and pressing the edges together well to seal them.
  8. Beat the egg and brush the surface of the triangles to give them a nice glaze when cooking.
  9. If desired, you can add a drizzle of honey over each triangle before baking, for a sweet-salty contrast.
  10. Bake the triangles on a baking tray lined with parchment paper for about 15-20 minutes, or until they are golden brown and puffed up.
  11. Let the triangles cool on a wire rack for a few minutes before serving. If desired, you can garnish them with chopped walnuts to add a crunchy touch.

Interesting Facts

In Italy, the combination of cheese with fruit is very appreciated, both as an appetizer and as an end-of-meal dish. The sweetness of the fruit contrasts with the savoriness of the cheese, creating a pleasant balance on the palate. These triangles are an excellent expression of this affinity of flavors.
