- Roll out the puff pastry and cut it into squares of about 8 cm on each side.
- In a bowl, mix the ricotta with a pinch of salt and pepper until you have a smooth mixture.
- Cut the taleggio into small pieces, being careful to remove the rind if not liked.
- Peel the pear and cut it into small cubes.
- Place a teaspoon of the ricotta mixture, a few pieces of taleggio, and a few cubes of pear in the center of each puff pastry square.
- Brush the edges of the puff pastry with a little water, then close the triangles by joining two opposite corners and pressing the edges together well to seal them.
- Beat the egg and brush the surface of the triangles to give them a nice glaze when cooking.
- If desired, you can add a drizzle of honey over each triangle before baking, for a sweet-salty contrast.
- Bake the triangles on a baking tray lined with parchment paper for about 15-20 minutes, or until they are golden brown and puffed up.
- Let the triangles cool on a wire rack for a few minutes before serving. If desired, you can garnish them with chopped walnuts to add a crunchy touch.
Interesting Facts
In Italy, the combination of cheese with fruit is very appreciated, both as an appetizer and as an end-of-meal dish. The sweetness of the fruit contrasts with the savoriness of the cheese, creating a pleasant balance on the palate. These triangles are an excellent expression of this affinity of flavors.
