Ricotta Tiramisù

The Ricotta Tiramisù is a lighter variant of the classic Tiramisù made with mascarpone. Here is the recipe:

Ingredients

  • 250 g of ricotta
  • 2 eggs
  • 80 g of sugar
  • 200 g of ladyfingers
  • Coffee as needed (enough to soak the ladyfingers)
  • Unsweetened cocoa powder for dusting
  • A pinch of salt

Optional:

  • Liquor of choice (such as Marsala or rum), to add to the coffee

Preparation

  1. Start by separating the yolks from the whites.
  2. Beat the yolks with the sugar until you have a light and fluffy mixture.
  3. Add the ricotta to the mixture of yolks and sugar and mix gently until well combined.
  4. In another bowl, whip the whites with a pinch of salt until stiff.
  5. Fold the whipped whites into the mixture of ricotta and yolks, being careful not to deflate them. Move the spoon or spatula from bottom to top.
  6. If you have chosen to use liquor, mix it with the cooled coffee.
  7. Soak the ladyfingers in the coffee (and liquor, if used) for a few seconds, being careful not to soften them too much.
  8. Arrange a layer of soaked ladyfingers at the bottom of a baking dish.
  9. Cover with a layer of ricotta cream and level well.
  10. Continue alternating layers of ladyfingers and cream, finishing with the cream.
  11. Put the Tiramisù in the refrigerator and let it rest for at least 3-4 hours, preferably overnight.
  12. Before serving, dust the surface with the unsweetened cocoa powder.
