Ricotta Ravioli

Ricotta ravioli are a classic of Italian cuisine, and here I will present a version that you can easily prepare at home.

Ingredients

  • 250 g of ricotta
  • 50 g of grated Parmigiano
  • 1 egg
  • Salt, to taste
  • Nutmeg, as desired
  • Egg pasta (you could make the dough at home with 100 g of flour and 1 egg per person, or buy it ready-made)

Preparation

  1. In a bowl, mix the ricotta with the Parmigiano, egg, a pinch of salt, and a grating of nutmeg until you get a homogeneous filling.
  2. Roll out the egg pasta into a thin sheet and place small amounts of the filling at regular intervals on the sheet.
  3. Cover with another sheet of pasta and, with the help of a pastry cutter or a pasta wheel, form the ravioli sealing the edges well to prevent the filling from coming out during cooking.
  4. Bring a pot of salted water to a boil and cook the ravioli for about 3-4 minutes or until they float to the surface.
  5. Drain them with a slotted spoon and season as desired; among the classic dressings, you can choose between butter and sage, tomato sauce, or a simple drizzle of extra virgin olive oil.

Curiosity

Ravioli are a very ancient dish, whose origin is lost in the mists of time. Each Italian region has its own variant with different fillings and sauces, making this dish extremely versatile and always new.

To give an even more Italian touch, you could use Italian PDO cheeses for the filling or even enrich it with fresh aromatic herbs such as thyme or basil. Enjoy your meal!
