Ingredients
- 500 g of ricotta
- 2 eggs
- 100 g of grated Parmesan
- Bread crumbs as needed
- Salt and pepper as needed
- Nutmeg (optional)
- Extra virgin olive oil
- 1 small onion

Preparation
- Start by mixing in a bowl the ricotta with the eggs, Parmesan, a pinch of salt, pepper, and a bit of nutmeg (if you like it).
- Add breadcrumbs until you have a mixture that can be shaped into meatballs (not too soft).
- Shape the meatballs into equal sizes and arrange them on a plate.
- In a pan, gently fry the finely chopped onion with a drizzle of extra virgin olive oil until it becomes transparent.
- Add the tomato puree, adjust for salt, and let it cook over medium heat for about 15-20 minutes.
- In another pan, heat a drizzle of extra virgin olive oil and brown the meatballs on all sides until golden.
- Once the meatballs are golden, gently transfer them into the pan with the sauce.
- Cover with a lid and let it simmer for about 10-15 minutes, until the meatballs are well cooked inside.
- At the end of cooking, add hand-torn fresh basil and let it infuse for a few minutes.
Curiosity
Ricotta meatballs are a typical dish of Italian home cooking, great for those looking for a lighter variant of the classic meatballs. The secret to a successful dish lies in the quality of the ricotta, which must be well-drained and flavorful. Moreover, for an even more Italian touch, you can serve them with homemade bread or soft polenta.
