Ingredients
- 500 g of ricotta cheese
- 4 eggs
- 150 g of sugar
- 1 packet of vanillin or the seeds of a vanilla pod
- The grated zest of 1 untreated lemon
- 120 g of all-purpose flour
- 1 packet of baking powder
- A pinch of salt
- Icing sugar for decoration
Preparation
- Begin by separating the yolks from the whites of the eggs.
- In a bowl, whisk the yolks with the sugar until you have a light and frothy mixture.
- Add the ricotta to the mixture of yolks and sugar and mix gently.
- Incorporate the vanillin or vanilla seeds and the lemon zest.
- Sift the flour with the baking powder and add it to the mixture, mixing carefully to avoid lumps.
- In another bowl, whip the egg whites with a pinch of salt until they are firm.
- Fold the whipped egg whites into the ricotta mixture, stirring from the bottom up to not deflate the mixture.
- Pour the batter into a buttered and floured pan or lined with parchment paper.
- Bake in a preheated oven at 180 °C for about 40 minutes, or until the cake is golden and firm to the touch.
- Let the cake cool in the pan, then unmold it onto a serving plate.
- Dust with icing sugar before serving.
