Preparation

  1. Begin by separating the yolks from the whites of the eggs.
  2. In a bowl, whisk the yolks with the sugar until you have a light and frothy mixture.
  3. Add the ricotta to the mixture of yolks and sugar and mix gently.
  4. Incorporate the vanillin or vanilla seeds and the lemon zest.
  5. Sift the flour with the baking powder and add it to the mixture, mixing carefully to avoid lumps.
  6. In another bowl, whip the egg whites with a pinch of salt until they are firm.
  7. Fold the whipped egg whites into the ricotta mixture, stirring from the bottom up to not deflate the mixture.
  8. Pour the batter into a buttered and floured pan or lined with parchment paper.
  9. Bake in a preheated oven at 180 °C for about 40 minutes, or until the cake is golden and firm to the touch.
  10. Let the cake cool in the pan, then unmold it onto a serving plate.
  11. Dust with icing sugar before serving.
