Ricotta Fritters
17/11/2023Ricotta fritters are a simple and delicious sweet, perfect for spoon desserts or a tasty snack. Here is the recipe:
Ingredients
- 250 grams of ricotta
- 2 eggs
- 50 grams of sugar
- 1 sachet of vanillin or a teaspoon of vanilla extract
- Grated zest of 1 lemon (if you like the aroma)
- 150 grams of 00 flour
- 1 teaspoon of baking powder for sweets
- A pinch of salt
- Oil for frying (seed oil is fine)
- Powdered sugar for garnish
Preparation
- In a bowl, mix the ricotta with the eggs until you get a homogeneous mixture.
- Add the sugar, vanillin or vanilla extract, and grated lemon zest, if you are using it.
- Mix well.
- Incorporate the flour, baking powder, and pinch of salt, combining all the ingredients until a smooth and lump-free dough is formed.
- Let the dough rest for about 10-15 minutes.
- In the meantime, heat plenty of oil in a frying pan suitable for frying and bring it to a temperature of about 170-180 °C. You can check the temperature by putting a piece of bread in the oil; if it fries and floats to the surface in a couple of seconds without burning, the oil is ready.
- Use two teaspoons to scoop portions of the dough and gently drop them into the hot oil.
- Fry the fritters until they are golden on all sides. This will take about 2-3 minutes per side.
- Drain them with a slotted spoon and let them rest on paper towels to remove the excess oil.
- Roll the fritters in powdered sugar before serving.
If you prefer an even more distinctive Italian touch, you can add chocolate chips to the dough or replace some of the sugar with honey.
Ricotta fritters are a simple but always appreciated dish and can be served both warm and cold. They are perfect for a moment of sweetness during the day or at the end of a meal.
Fun Fact
Ricotta is a very versatile ingredient in Italian pastry and is the basis of many regional sweets, such as Sicilian cassata or cannoli. Moreover, the use of ricotta instead of butter or margarine makes these fritters particularly soft and light.
