Ricotta Cookies
17/11/2023Ricotta cookies are soft and light treats, perfect to accompany tea or coffee. Here’s the recipe:
Ingredients
- 250 g of all-purpose flour
- 125 g of sugar
- 125 g of ricotta cheese
- 1 egg
- The grated zest of 1 lemon (organic if possible)
- 1/2 teaspoon of baking powder
- 1 pinch of salt
- Powdered sugar for decorating (optional)
Preparation
- Turn on the oven and preheat to 180 °C.
- In a bowl, mix the ricotta with the sugar until you have a homogeneous mixture.
- Add the egg and grated lemon zest and mix well.
- In another bowl, sift the flour with the baking powder and a pinch of salt.
- Gradually add the dry ingredients to the ricotta mixture, stirring until you get a soft dough.
- Line a baking sheet with parchment paper.
- Using two spoons or damp hands, form small mounds of dough and place them on the baking sheet, leaving some space between them as they will puff up during cooking.
- Bake in the oven for about 15-20 minutes or until the cookies are slightly golden.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a cooling rack.
- Once cooled, if desired, dust with powdered sugar before serving.
