Ricotta Cookies

Ricotta cookies are soft and light treats, perfect to accompany tea or coffee. Here’s the recipe:

Ingredients

  • 250 g of all-purpose flour
  • 125 g of sugar
  • 125 g of ricotta cheese
  • 1 egg
  • The grated zest of 1 lemon (organic if possible)
  • 1/2 teaspoon of baking powder
  • 1 pinch of salt
  • Powdered sugar for decorating (optional)

Preparation

  1. Turn on the oven and preheat to 180 °C.
  2. In a bowl, mix the ricotta with the sugar until you have a homogeneous mixture.
  3. Add the egg and grated lemon zest and mix well.
  4. In another bowl, sift the flour with the baking powder and a pinch of salt.
  5. Gradually add the dry ingredients to the ricotta mixture, stirring until you get a soft dough.
  6. Line a baking sheet with parchment paper.
  7. Using two spoons or damp hands, form small mounds of dough and place them on the baking sheet, leaving some space between them as they will puff up during cooking.
  8. Bake in the oven for about 15-20 minutes or until the cookies are slightly golden.
  9. Let the cookies cool on the baking sheet for a few minutes before transferring them to a cooling rack.
  10. Once cooled, if desired, dust with powdered sugar before serving.
