Ricotta and Strawberry Cups

Ricotta and strawberry cups are a fresh and delicious dessert, perfect for spring or summer. Here’s how to prepare them:

Ingredients

  • 250 g of fresh ricotta
  • 200 g of ripe strawberries
  • 2-3 tablespoons of powdered sugar (or to taste)
  • 1 teaspoon of vanilla extract or the seeds from a vanilla bean
  • Dry biscuits (such as ladyfingers or grandma’s cookies), as needed
  • Fresh mint for garnish

Preparation

  1. First, to prepare your cups, wash and clean the strawberries. Dice most of them, leaving some whole for the final decoration.
  2. In a bowl, blend the ricotta with the powdered sugar and vanilla extract until you get a smooth and uniform cream.
  3. Lightly crush the cookies to get not-too-fine pieces that will serve as a crunchy base for your dessert.
  4. Start composing the cups by alternating a layer of crumbled cookies, one of ricotta cream, and one of diced strawberries.
  5. Repeat the layers until the cups are filled, finishing with diced or whole strawberries for decoration.
  6. Refrigerate for at least 30 minutes before serving, to allow the dessert to rest and set.
  7. When serving, garnish with mint leaves for a touch of freshness.

This dessert is not only delicious but also very versatile. You can replace the ricotta with mascarpone or Greek yogurt for a creamier variant, or choose other types of fruit according to the season.
