Ricotta and Strawberry Cups

Ingredients
- 250 g of fresh ricotta
- 200 g of ripe strawberries
- 2-3 tablespoons of powdered sugar (or to taste)
- 1 teaspoon of vanilla extract or the seeds from a vanilla bean
- Dry biscuits (such as ladyfingers or grandma’s cookies), as needed
- Fresh mint for garnish
Preparation
- First, to prepare your cups, wash and clean the strawberries. Dice most of them, leaving some whole for the final decoration.
- In a bowl, blend the ricotta with the powdered sugar and vanilla extract until you get a smooth and uniform cream.
- Lightly crush the cookies to get not-too-fine pieces that will serve as a crunchy base for your dessert.
- Start composing the cups by alternating a layer of crumbled cookies, one of ricotta cream, and one of diced strawberries.
- Repeat the layers until the cups are filled, finishing with diced or whole strawberries for decoration.
- Refrigerate for at least 30 minutes before serving, to allow the dessert to rest and set.
- When serving, garnish with mint leaves for a touch of freshness.

This dessert is not only delicious but also very versatile. You can replace the ricotta with mascarpone or Greek yogurt for a creamier variant, or choose other types of fruit according to the season. Additionally, if you prefer, you can enrich the cream with chocolate chips or a splash of liquor, such as limoncello or sambuca, to add an extra aroma.
