Ricotta and Strawberry Cake

Ingredients

  • 250 g of dry biscuits
  • 100 g of melted butter
  • 500 g of ricotta
  • 100 g of powdered sugar

  • 300 g of fresh strawberries
  • 250 ml of whipping cream
  • 4 sheets of gelatin or the equivalent in powdered gelatin
  • Juice of 1/2 lemon

Preparation

  1. Start by crushing the biscuits until you get a coarse flour. Mix the crushed biscuits with the melted butter until you have a homogenous mixture.

  2. Line the bottom of a springform pan with parchment paper, then pour in the biscuit and butter mixture, pressing down well to create a compact layer. Refrigerate for at least 30 minutes to set.

  3. In the meantime, put the gelatin sheets in a bowl with cold water to hydrate them for about 10 minutes.

  4. In a bowl, work the ricotta with the powdered sugar and vanillin until you get a smooth and homogenous mixture.

  5. Take about a third of the strawberries, blend them with the lemon juice, and strain the juice to remove the seeds.

  6. Warm the strawberry and lemon juice slightly, squeeze the hydrated gelatin sheets and dissolve them in the warm juice.

  7. Whip the cream and gently fold it into the ricotta mixture, then also add the gelatin dissolved with the strawberry and lemon juice. Mix carefully until you get a homogenous mixture.

  8. Pour the ricotta cream over the cooled biscuit base and level it with a spatula.

  9. Wash and slice the remaining strawberries and arrange them on top of the cream to your liking.

  10. Let the cake rest in the refrigerator for at least 4 hours, better if overnight, so that it sets well.

  11. Before serving, remove the springform ring and carefully transfer the cake onto a serving plate. If you wish, you can decorate it with powdered sugar, mint leaves, or chocolate decorations.
